TIRAMISU (Tiramisu)

Tiramisu means "pick me up" in Italian, probably because it's so good you're sure to swoon when you taste it. This delicious dessert has many different variations depending on the region and the pastry chef. The recipe can be easily modified in a number of ways, simply by changing the proportions of mascarpone, eggs, lady fingers, coffee, and liqueur.

INGÉDIENTS
Serves 6 to 8

1) Using an electric mixer, whip egg whites until they form stiff peaks.
2) In another bowl, combine mascarpone, vanilla sugar, and egg yolks, mixing well. Work in the egg whites and spread several spoonfuls of the mixture in a large trifle dish.
3) Mix coffee and liqueur in a shallow pan. Quickly dip a lady finger into the mix until it is soaked in liquid but does not fall apart. Lay it on top of the cream mixture in the trifle dish. Repeat process with 5 other lady fingers, lining them up in a row.
4) Spread 1/3 of the remainder of the cream mixture over the lady fingers. Continue alternating layers of lady fingers and cream mixture, finishing with the mascarpone. Smooth the top, then cover and refrigerate overnight. Sprinkle with cocoa and top with chocolate shavings before serving.
